To maximize your defense, the first thing you need to do is sort out your priorities. I recommend this strategy:

1. Town hall
2. Storage buildings (not collectors)
3. Resource collectors (mines etc.)
4. Mortars/X-bows

The greater the priority, the more defense to allocate to that building (walls, towers, etc.). I tend to put at least 3 defenses within range of your town hall. The resource buildings I normally put inside of the walls, preferably next to the town hall. Then I would put the collectors just outside the walls to save space, but within range of the defenses. As for the mortar, surround that with walls to protect it from enemy fire.
