Beat certain racers from the Blacklist to unlock the cars which you can buy from the Safehouse.

The AI cars preformance are leveled ot balance your cars preformance. So if you equip the max upgrade for the car that you are racing in, you will find the AI cars very hard to overtake. However if you equip the car to its Stock state, all AI cars will be put into Stock state. Therefore, if you take your Porsche Carrera GT to a race in its Stock state, you can beat your opponents easily.
