On stage 3 with your first Boss battle with Jean, run and hide behind the stagecoach. Jean will run up to it on the other side. He will try to shoot you but cannot. However you can still hit him. Keep swinging your sword and it will go through the stagecoach and hit Jean. Keep this up until he is dead. You should not have lost any health.
