Picking cargo/cars

I'm confused about picking cars/cargo and supply & demand. Is just having the correct cars in your consist insure you are delivering the "demand" cargo to a particular station or must your track/train first go to a city that supplies that commodity, pick it up, and then deliver it to a demand station? in one game played i could not find one city that listed as "supply" the commodity that baltimore demanded.
