What is an easy way to defeat the blind bandit?

Its easy you just use your special moves to defeat her even your normal moves

Well the easiest way is to keep your distance and attack her with your first bending move, when she bends a rock at you(which you can be sure she will) jump or get out of the way. to make things a little quicker, you can also have apples or bananas or lychees to speed up the 'chi' rejuvenation.
