I am not able to view all the courses on the main menu. two of the courses, ireland and finland are barely visible and i can't see some of the courses that are opened on reaching certain levels. how do i view all courses available on the main menu?

You have to reach certain levels in order to get the courses unlocked. you'll get them unlocked at

egypt - level 7
ireland - level 10
china - level 20
under the sea - level 30
milky way - level 40
tuscany/italy - level 42

i dont know about the newer 9 hole courses finland & france
