The apple trees are dotted around Arizona, mainly near the two towns and behind the large fort. You need to be looking up when you get to one to pick the apples.

To pick the apples, get close to the trunk of the tree, and look up, straight up, sometimes you need to move around the trunk while looking up until the hand appears, but you'll figure out the trick if you just keep working at it by looking up and moving around the trunk
