How can u beat this one in 30 seconds.

You just have to keep trying.

Only two things I've found are: 1). The third hole, for me, is the easiest to get a good run going. The stacks are easier to follow quickly with your eyes. So I just keep trying that one. 2). If you're quick enough, when you end a run and have to flip the next card, you can hit the iPad's lock button to turn the iPad off. This stops the clock. When you turn the game back on, sometimes the clock will hang for fraction of a second. Only useful if you can kinda take a "flash memory" of what cards you had, shut it off, and think about your next move before you turn it back on.
