Quest 28 The specimen
I'm not quite sure what needs to be done for this quest. It states "Catch 1 fish for each grade, from F to S." Every fish that I get says "quest fish" ...but don't all quest fish need to be kept in order to finish the quest?

Need to catch 1 fish of a kind, just passed this quest (i.e. 1 - s grade. 1- a grade, ... , 1 - f grade), and bring to the quest giver

Yes it can be hard to keep track as every fish caught will be a quest fish. You need to keep at least one of every grade in your boat to claim this quest. You can lock the fish into your boat to prevent accidentaly selling it.
