How do you get the star for boarding all platforms?? what does boarding all platforms mean??

Get off and on (ride all) modes of transportation (train, boats, trolley cars, helicopters and planes) at their boarding platforms-pink crown areas show location.

Just goto marine and ride all the boats and planes and all other tansportations. you can press a and skip.

Go to all resorts and just go on all transportation devices (villa grounds don't have any so ignor that one)
