Sounds like you're talking about the Upgrade Path you choose for any given Skylander. I think I heard a rumour that Series 2 Skylanders are able to change upgrade paths, but I think that's only a rumour. Even if it's true, it still means that Series 1 Skylanders can't. The only way to truly change your mind is to Reset the Skylander and start over. Go to the character menu ([-] button for the Wii, Select/Back on other systems), choose Manage, and choose Reset (it'll probably warn that this is extreme and permanent, no back-sies). This puts the Skylander back to store-new, Level 1, no experience, no money, no upgrades, no hat. Then you can start upgrading from scratch.
I recommend that before choosing a path, when it comes to that exit from Persephone and use the same character menu to check the upgrades, to make an informed decision about which path looks best. You couldn't do that in Spyro's Adventure, but in Giants they're nice enough to let you read about the upgrades before you pick the path, before you can even buy them.
